Domestic lamb is not something you will find in many restaurants. Most restaurants serve the less expensive lamb from New Zealand. Colorado-raised lamb is the highest quality on the market, though. It’s less gamey tasting, tender, and absolutely the best lamb you can eat.
You will receive all ingredients fully prepped, sliced and diced, and par-cooked, including the rack of lamb (we par-cook the lamb to cut down on the cooking time). The fresh ingredients of this dish are neatly sealed in containers and vacuum-sealed bags. Both the chipotle hummus and the cucumber raita are separately jarred and sealed. The rack of lamb is par-cooked and pre-rubbed. All ingredients will be stored in separate containers and packed in insulated ice-packed boxes. The total cooking time is less than 15 minutes.

The temperature of the ingredients should maintain a temperature no greater than 42 degrees.
