Pistachio-encrusted in-season salmon, herb roasted tri-colored fingerling potato, maple and vanilla bean beurre blanc, and sauteed swiss chard.
If you don’t like fishy tastes, the good news is that you will probably like salmon. Salmon is a mildly flavored meat that comes straight out of the sea and often has a subtle and refreshing taste. In this dish, the roasted red pepper coulis creates a bright red presentation and provides a hint of sweet flavoring.
In 2003, the Faroe Islands implemented one of the most comprehensive and stringent aquaculture veterinarian regulatory regimes in the world, known as the Faroese Veterinarian Act on Aquaculture. This was enacted following requests from the industry for stringent legislation that would create a predictable and sustainable fish production environment. Because of this Act, the Faroe Islands have the most sustainable fish production environment in the world.
